What I'd like to do is something I know is possible with ENBD (Enhanced NBD) but the author is still tinkering with it so I'm not sure I entirely trust it. So I wondered if it's possible with iSCSI.

Wouldn't this come under the banner of Storage Array Network aka SAN ?

The idea that many hardware nodes are a single software node, clients connect to software node. Hardware node dies, nothing happens as far as the client is concerned...
